Apple Meatloaf

  • Meatloaf3 pounds ground beef
  • 1/2 quart applesauce
  • 2 C rolled oats (GF)
  • 2 duck eggs OR flax seed egg substitute*
  • 3 tsp salt
  • 1 tsp dry mustard
  • 1-1/2 tsp chopped fresh sage

Place all ingredients in a large bowl and mix thoroughly.  When combined, press into a loaf pan and spread another 1/2 quart of applesauce over the top.   Bake at 375* for 90 minutes.

Easy to serve with baked potatoes (they go in the same oven, so are easy to cook) and a green salad.


*Powder 2 Tbsp flax seeds in a blender or food processor.  While appliance is running, drizzle in 1/2 cup water.  The resulting mixture will be light and frothy, and can be used as egg replacer in this recipe.
