Preheat electric griddle to 350, or skillet on stove between medium & medium-high.  Pan is the right temperature when drops of water dance around on the pan.


  • 2 C fruit juice (orange or apple)
  • 1/4 C oil
  • 2 duck eggs (or chicken eggs if you don’t have ducks)
  • 2 C flour (all-purpose, or Bob’s Red Mill AP-GF)
  • 1 tsp baking soda
  • 1 tsp salt

Pour juice into 2-qt measuring cup up to the 2-cup line.  Add cooking oil equal to 1/4 cup (precision is not necessary, just get close).  Add remaining ingredients and mix well.  (note – if you don’t have a 2-quart measuring cup, or if you like to wash lots of dirty dishes, the batter can be mixed an any bowl/pitcher)

Pour batter onto hot griddle/pan.  Hotcakes are ready to flip when there are little holes all over the top – turn over so that both sides are cooked.
