- 2 C fruit juice (orange or apple)
- 1/4 C oil
- 2 duck eggs
- 2 C flour (all-purpose, or Bob’s Red Mill AP-GF)
- 1 tsp baking soda
- 1 tsp salt
Pour juice into 2-qt measuring cup up to the 2-cup line. Add cooking oil equal to 1/4 cup (precision is not necessary, just get close). Add remaining ingredients and mix well. (note – if you don’t have a 2-quart measuring cup, or if you like to wash lots of dirty dishes, the batter can be mixed an any container)
Bake on hot griddle. Hotcakes are ready to flip when there are little holes all over the top – turn over so that both sides are cooked.
