At least eight hours before you want to eat, in a big bowl, stir together:
- 1/2 C lukewarm water
- 1 Tbsp sugar
- 2-1/2 tsp yeast
Let sit for 10 minutes. Meanwhile, melt
- 1 stick of non-dairy butter (1/2 cup) and allow it to cool.
To the yeast mixture, add:
- 1 1/2 C water
- 1 tsp salt
- 2 C flour
- the aforementioned melted butter
Beat until smooth. Wrap bowl tightly with plastic wrap and let stand overnight on the countertop. Do not refrigerate.
At mealtime, add:
- 2 duck eggs
- 2 tsp vanilla
- 1/4 tsp baking soda
Beat well. Bake on waffle iron.
