Overnight Waffles

At least eight hours before you want to eat, in a big bowl, stir together:

  • 1/2 C lukewarm water
  • 1 Tbsp sugar
  • 2-1/2 tsp yeast

Let sit for 10 minutes.  Meanwhile, melt

  • 1 stick of non-dairy butter (1/2 cup) and allow it to cool.

To the yeast mixture, add:

  • 1 1/2 C water
  • 1 tsp salt
  • 2 C flour
  • the aforementioned melted butter

Beat until smooth.  Wrap bowl tightly with plastic wrap and let stand overnight on the countertop.  Do not refrigerate.

At mealtime, add:

  • 2 duck eggs
  • 2 tsp vanilla
  • 1/4 tsp baking soda

Beat well.  Bake on waffle iron.
