This is an incredibly easy meal made from leftover orange chicken.
In a rice cooker, place:
- 1-1/2 cups rice and
- 3 cups liquid (water, chicken bouillon, or juice from leftover chicken)
Cook the rice (this can be done in a pot on the stove, if you prefer to cook rice on the stovetop).
While rice is cooking, remove chicken meat from bones. Place some of the leftover orange broth in a large saucepan and heat until melted. Thicken this broth with some tapioca flour or cornstarch, then add the chicken meat. Stir all into cooked rice.
