Brown hamburger: Break ground beef into small pieces and place in a large microwave dish. Cook, stirring occasionally, until meat is cooked. An alternate method is to cook and stir in a frying pan on the stovetop until meat is browned.
For my family, I usually cook 3 pounds of meat – more or less, depending on how hungry everyone is.
Prepare tortillas: heat skillet on stove
- 3 C cold water
- 2 C flour of your choice
- 1 C cornmeal
- 1/2 tsp salt
- 2 duck eggs
Mix all ingredients well. Spoon batter (I use a soup ladle) onto hot skillet; tip pan to spread batter thin. Flip to cook other side.
Prepare other ingredients:
Slice olives. Actually, I put them all in my 2C pyrex measuring cut and use the kitchen shears to cut the olives into bits – this wouldn’t work if you want attractively prepared slices, but it works for my family.
Grate cheese – or buy it already grated.
Chop tomatoes – the key to this is a good, sharp knife
Shred lettuce – after washing, I usually tear the lettuce by hand
Place separate dishes of each ingredient on the table and let people assemble their own tacos. Sprinkle with amount of chili powder desired.
